The Goods (courtesy of food.com)
12 teaspoons colored sugarpink (all you do is add 1 drop of red food coloring to the sugar and mix)
Here is my pink sugar and my cute liners |
I package white cake mix
water (amount based on cake mix instructions)
3/4 cup frozen pink lemonade concentrate thawed (undiluted)
1 tablespoon lemon zest (I of course eyeballed this)
The How To
Preheat oven 350degrees.
Sprinkle 1 teaspoon colored sugar into each cupcake liner.
Add water to pink lemonade mix to total amount of water called for on the mix package
Follow cake mix package directions to prepare cake, adding chopped lemon peel. (Seriously follow the directions! The first time I made these I only mixed the batter for 30seconds then baked and the cupcakes didn't really rise. I then went back and mixed the leftover batter for about 2mins longer and those cupcakes turned out great)
Pour into prepared pan.
Bake 20-25 mins (I checked mine at 15mins and they were done) check with toothpick
Let cool then move the cupcakes to a wire rack so the bottoms don't sweat.
Lemon Buttercream Frosting(courtesy of cdkitchen.com)
Can't have a cupcake without the right frosting!!!
The Goods
1 1/4 cup butter (softened)
2 teaspoons lemon zest (just eyeball it)
3 tablespoons lemon juice (or you can use the pink lemonade concentrate)
3cups powdered sugar
red food coloring (if you want to make the frosting pink)
The How To
Place butter, lemon zest, and lemon juice in a bowl. Beat with a mixer for 1min make sure to scrap down the sides of the bowl often. Sift powdered sugar one cup at a time to the mix. Keep mixing until fluffy and blended.
