#38 Creme de Menthe Cupcakes

I really debated about actually posting these ones....They were just horrible!!!!!! These poor little cuppys should have been named Creme De Poopie! But I've decided to suck it up because this blog is about my experience and this for sure was and I hope that someone else has better luck with it. Overall I found it dry, not chocolaty enough, and had a really odd after taste. What I did find from this experience was that I do really like the frosting tip that I used.... Yeah that's about it. Good luck if you do try these and PLEASE let me know if you give these a shot and what you did differently.






Creme De Menthe Cupcakes
Well the liquor will get you in a festive mood!!


The Goods
1 1/2 cups flour
4 tablespoons cocoa powder
1 1/2 teaspoons baking powder
1 cup sugar
1 cup unsalted butter room temp
4lg eggs room temp
2 teaspoons creme de menthe
1 teaspoon mint extract
1 cup semi sweet chocolate chips
1/4 teaspoon salt


The How to
Preheat over to 350degrees. In a medium bowl sift together the flour, cocoa, baking powder, and salt.










 Set aside. In the bowl of a stand up mixer on medium-high speed beat butter and sugar until light and fluffy-about 3mins.








Add the eggs one at a time, mixing well after each addition.








On low speed add the flour mixture, stirring until combined.






Add in the creme de menthe, mint extract and chocolate chips.








Fill cups about two thirds full and bake for 18mins rotating them half way through the bake time.




Let cupcakes cool for 10mins in pan them move them to the rack to cool completely.




Chocolate Creme De Menthe Buttercream
Wasn't planning on adding chocolate but it seemed like it was missing something. Maybe next time I will test out white chocolate.


The Goods
2/3 cup unsalted butter room temp
4 cups powdered sugar
5 tablespoons creme de menthe
1 1/2 cups semi sweet chocolate chips melted and slightly cooled


The How To
Melt the chocolate chips in a double boiler and set aside to cool.




Beat butter on medium-high speed until creamy. Turning the speed down to low add the sugar one cup at a time. Add in the creme de menthe.


Hello St. Patty's Day!
If it gets too thick add a tablespoon or two of milk.
Add in the melted chocolate and mix until combined.




Now go ahead and frost away!!


This is my new favorite frosting tip! Looks like roses :)
